Abstract

This study was carried out in the Ordu plain (Turkey). It examined 6 different local fig cultivars viz. Aǧustos, Beyaz (Ak), Deǧirmen, Kara, Kuş (Çamaş) and Patlican. In these cultivars, fruit weight was determined between 11.35-58.00 g, fruit width between 3.10-5.25 cm, fruit length between 2.20-6.20 cm, pH between 4.2-5.3, total soluble solid contents between 16.6-20.0% and titratable acidity between 0.11-0.30%. The cultivars are mainly used for fresh consumption in Ordu.
