Determination of the optimum harvest date (OHD) in fruit is one of the most important factors for preserving fruit quality and reducing losses before and after harvest. In this study, it was aimed to determine suitable criteria for OHD in Eşme, the most common varieties of quince grown in Turkey. For this purpose, fruit samples were taken weekly from the small fruit period to the end of the harvest date for a period of 2 years. The days after full blossom (DAFB), fruit weight, width and length development, starch degradation, fruit flesh firmness, soluble solid content, pH, titratable acidity, fruit ground color, ethylene production and respiration rate were determined in fruit samples during fruit development period. The most useful quality parameters for OHD determined in the Eşme quince variety are DAFB, fruit ground color (h° value), flesh firmness and starch index. DAFB for harvest early, optimum and late periods of fruit were 150-155 days, 155-165 days, 165-175 days; skin color scale values were 5-6, 7, and 8; ground color h° values were 115°-110°, 110°-105°, and 105°-100°; firmness were 85-90 N, 75-80 N, and 70-75 N; starch scale values were 4-5, 6, and 7, respectively.
